A hearty and healthy slow cooker stew with Tuscan flavors featuring tender chicken, white beans, and sun-dried tomatoes.


Ingredients

  • 1.5 lbs boneless chicken thighs
  • 1 can (15 oz) white beans, drained
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Place chicken at the bottom of the slow cooker.
  2. Add white beans, sun-dried tomatoes, garlic, onion, carrots, and celery.
  3. Pour in chicken broth and sprinkle with rosemary, thyme, salt, and pepper.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Shred chicken before serving.
