Description
A hearty and healthy slow cooker stew with Tuscan flavors featuring tender chicken, white beans, and sun-dried tomatoes.
Ingredients
- 1.5 lbs boneless chicken thighs
- 1 can (15 oz) white beans, drained
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Place chicken at the bottom of the slow cooker.
- Add white beans, sun-dried tomatoes, garlic, onion, carrots, and celery.
- Pour in chicken broth and sprinkle with rosemary, thyme, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Shred chicken before serving.

- Serve with crusty bread.
- Can substitute chicken breasts for thighs.
- Freezes well for up to 3 months.
