Quick and easy garlic parsley potatoes with just 5 ingredients. Perfect as a side dish for any meal.
Ingredients
- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, and pepper.
- Spread in single layer on baking sheet.
- Roast for 30 minutes until golden.
- Toss hot potatoes with garlic and parsley.
- Serve immediately.
Notes
- Use small potatoes for even cooking.
- Add garlic after roasting to prevent burning.
- Substitute dried parsley if fresh isn’t available (use 1 tbsp).
