Description

A delicious and healthy baked quesadilla filled with spinach and mushrooms.


Ingredients

  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 cup shredded cheese
  • 4 whole wheat tortillas
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F.
  2. Sauté spinach and mushrooms in olive oil until soft.
  3. Place tortillas on a baking sheet.
  4. Spread cheese evenly on half of each tortilla.
  5. Top with spinach and mushroom mixture.
  6. Fold tortillas over and press lightly.
  7. Bake for 10 minutes until golden brown.
  8. Cut into wedges and serve warm.
