Description
A refreshing and healthy kale salad with a tangy lemon Dijon dressing, perfect for Christmas gatherings.
Ingredients
- 1 bunch kale, stems removed and chopped
- 1/4 cup olive oil
- 2 tbsp Dijon mustard
- 2 tbsp lemon juice
- 1 tsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup dried cranberries
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Wash and dry the kale thoroughly. Remove stems and chop into bite-sized pieces.
- In a small bowl, whisk together olive oil, Dijon mustard, lemon juice, honey, salt, and pepper.
- Pour the dressing over the kale and massage it into the leaves for 2-3 minutes to soften them.
- Add dried cranberries, sliced almonds, and feta cheese (if using). Toss gently to combine.
- Let the salad sit for 10 minutes before serving to allow flavors to meld.
Notes
- Massaging the kale makes it tender and less bitter.
- For a vegan version, omit the feta cheese.
- Store leftovers in an airtight container in the fridge for up to 2 days.
