Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/4 cup chopped fresh parsley
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add potatoes, broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
- Use a blender or immersion blender to puree half the soup for a creamy texture.
- Stir in heavy cream and heat through.
- Garnish with fresh parsley before serving.
Notes
- For a thicker soup, mash more potatoes.
- Add shredded cheese or bacon bits for extra flavor.
