Description
A creamy and comforting soup made with fresh broccoli and sharp cheddar cheese.
Ingredients
- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp flour
- Salt and pepper to taste
Instructions
- Melt butter in a pot over medium heat.
- Add diced onion and minced garlic. Cook until soft.
- Stir in flour and cook for 1 minute.
- Pour in vegetable broth and bring to a simmer.
- Add broccoli florets and cook until tender.
- Reduce heat and stir in heavy cream.
- Add shredded cheddar cheese and stir until melted.
- Season with salt and pepper.
- Blend half the soup for a smoother texture if desired.
- Serve hot.
