Description
A creamy and comforting broccoli cheddar soup perfect for cold days.
Ingredients
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp flour
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Melt butter in a pot over medium heat.
- Add diced onion and minced garlic. Cook until soft.
- Stir in flour to make a roux.
- Slowly pour in vegetable broth while stirring.
- Add broccoli florets and simmer for 10 minutes.
- Pour in heavy cream and bring to a gentle boil.
- Reduce heat and stir in shredded cheddar cheese until melted.
- Season with salt and pepper.
- Serve hot.
