Description
A simple and healthy cabbage soup designed to support weight loss. It’s low in calories but packed with nutrients.
Ingredients
- 1 medium cabbage, chopped
- 2 large onions, diced
- 4 carrots, sliced
- 3 celery stalks, chopped
- 6 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 8 cups vegetable broth
- 1 tsp black pepper
- 1 tsp paprika
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Cook for 5 minutes.
- Add garlic and sauté for 1 minute.
- Stir in cabbage and cook for another 5 minutes.
- Pour in vegetable broth and diced tomatoes.
- Season with black pepper and paprika.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 4 days.
- Add more broth if the soup thickens too much.
- You can add other vegetables like bell peppers or zucchini.
