Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced

  • 1 lb smoked sausage, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, chopped


Instructions

  1. In a large pot, sauté onion, garlic, and bell pepper until softened.
  2. Add smoked sausage and cook until browned.
  3. Stir in diced potatoes, chicken broth, Cajun seasoning, and paprika.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
