A hearty and flavorful soup loaded with potatoes, Cajun spices, and creamy goodness.
Ingredients
- 4 large russet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 lb smoked sausage, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, chopped
Instructions
- In a large pot, sauté onion, garlic, and bell pepper until softened.
- Add smoked sausage and cook until browned.
- Stir in diced potatoes, chicken broth, Cajun seasoning, and paprika.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use a potato masher to slightly thicken the soup.
- Stir in heavy cream and simmer for 5 minutes.
- Season with salt and pepper to taste.
- Serve hot topped with shredded cheese, crumbled bacon, and green onions.
Notes
- Adjust Cajun seasoning to your preferred spice level.
- For a thicker soup, mash more potatoes.
