Ingredients
- 1 cup orzo pasta
- 2 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 tbsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- 1/4 cup chopped parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper. Cook until softened, about 5 minutes.
- Stir in garlic and Cajun seasoning. Cook for 1 minute.
- Add orzo, diced tomatoes, and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 10–12 minutes until orzo is tender.
- Season with salt, black pepper, and cayenne if using.
- Garnish with parsley before serving.
