Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 celery stalks, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and celery. Cook until softened.
  3. Stir in potatoes, Cajun seasoning, and smoked paprika.
  4. Pour in broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Blend half the soup for a creamy texture, then return to the pot.
  6. Stir in heavy cream and season with salt and pepper.
  7. Simmer for 5 more minutes before serving.
