Description
A hearty and flavorful Cajun potato soup with a spicy kick.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 celery stalks, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, bell pepper, and celery. Cook until softened.
- Stir in potatoes, Cajun seasoning, and smoked paprika.
- Pour in broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
- Blend half the soup for a creamy texture, then return to the pot.
- Stir in heavy cream and season with salt and pepper.
- Simmer for 5 more minutes before serving.
Notes
- Adjust Cajun seasoning for more or less spice.
- Garnish with green onions or shredded cheese.
- Store leftovers in the fridge for up to 3 days.
