Description
A quick and easy cheesy dip made with Rotel tomatoes and melted cheese, perfect for parties and gatherings.
Ingredients
- 1 (10 oz) can of Rotel diced tomatoes & green chilies
- 1 (16 oz) package of Velveeta cheese, cubed
- 1/2 lb ground beef, cooked and drained (optional)
- 1/2 tsp cumin (optional)
- 1/4 tsp garlic powder (optional)
Instructions
- In a medium saucepan, combine Rotel and Velveeta over low heat.
- Stir frequently until cheese is fully melted and mixture is smooth.
- If using ground beef, add cooked beef and stir well.
- Season with cumin and garlic powder if desired.
- Serve warm with tortilla chips, crackers, or vegetables.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the microwave or on the stovetop.
- For a spicier dip, use hot Rotel or add diced jalapeños.
