A delicious and easy dish combining the flavors of tacos with cheesy potatoes.
Ingredients
- 4 medium potatoes, diced
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Toss the diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes until tender.
- While the potatoes roast, brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the taco seasoning and water as directed on the packet. Simmer for 5 minutes.
- Mix the cooked potatoes and beef in a baking dish. Top with shredded cheese.
- Bake for 10 minutes until the cheese melts.
- Garnish with sour cream and green onions before serving.
Notes
- Swap ground beef for ground turkey or beans for a lighter option.
- Add diced bell peppers or jalapeños for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
