Ingredients
- 2 cups cooked chicken, shredded
- 1 cup white rice, cooked
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix shredded chicken, cooked rice, enchilada sauce, onions, bell peppers, cumin, chili powder, salt, and black pepper.
- Spread the mixture evenly in a greased baking dish.
- Sprinkle shredded cheddar cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
