A delicious and creamy chicken enchilada recipe with a sour cream white sauce.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup sour cream
- 1 cup shredded cheese
- 1/2 cup chicken broth
- 1/4 cup butter
- 1/4 cup flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 8 flour tortillas
Instructions
- Preheat oven to 350°F.
- Melt butter in a saucepan over medium heat.
- Whisk in flour and cook for 1 minute.
- Slowly add chicken broth, stirring constantly.
- Mix in sour cream, garlic powder, onion powder, salt, and pepper.
- Simmer until thickened.
- Combine shredded chicken with half of the sauce.
- Fill tortillas with chicken mixture and roll them up.
- Place enchiladas in a baking dish.
- Pour remaining sauce over the top.
- Sprinkle with shredded cheese.
- Bake for 20 minutes.
