Ingredients
- 2 lbs chicken breast, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 8 flour tortillas
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add chicken, peppers, and onion. Cook until chicken is done.
- Stir in fajita seasoning.
- Layer tortillas in a baking dish.
- Spread chicken mixture over tortillas.
- Top with sour cream and salsa.
- Sprinkle cheeses evenly.
- Bake for 20 minutes or until cheese melts.
- Let cool slightly before serving.
