A hearty and comforting soup that combines the flavors of traditional lasagna in a bowl.
Ingredients
- 1 lb ground chicken
- 1 onion, diced
- 3 cloves garlic, minced
- 28 oz crushed tomatoes
- 6 cups chicken broth
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- 1 tbsp chopped fresh basil
Instructions
- Brown the ground chicken in a large pot over medium heat.
- Add the onion and garlic, cook until softened.
- Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then add broken lasagna noodles.
- Reduce heat and simmer for 15 minutes or until noodles are tender.
- In a small bowl, mix ricotta, mozzarella, and Parmesan.
- Serve soup topped with cheese mixture and fresh basil.
Notes
- Substitute ground beef for chicken if preferred.
- Add spinach or mushrooms for extra vegetables.
- Store leftovers in the refrigerator for up to 3 days.
