Ingredients

  • 1 lb ground chicken
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 6 cups chicken broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh basil


Instructions

  1. Brown the ground chicken in a large pot over medium heat.
  2. Add the onion and garlic, cook until softened.
  3. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then add broken lasagna noodles.
  5. Reduce heat and simmer for 15 minutes or until noodles are tender.
  6. In a small bowl, mix ricotta, mozzarella, and Parmesan.
  7. Serve soup topped with cheese mixture and fresh basil.

Notes

  • Substitute ground beef for chicken if preferred.
