Delicious and easy-to-make chicken pot pie hand pies, perfect for a quick meal or snack.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables
- 1/2 cup diced potatoes
- 1/4 cup diced onions
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 cup chicken broth
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 package refrigerated pie crusts (or homemade)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 375°F (190°C).
- In a pan, melt butter and sauté onions until soft.
- Add flour, stir to make a roux.
- Slowly add chicken broth and milk, stirring until thickened.
- Add chicken, vegetables, potatoes, salt, and pepper. Mix well.
- Roll out pie crusts and cut into circles.
- Spoon filling onto half of each circle, fold over, and seal edges with a fork.
- Brush with egg wash and cut slits on top.
- Bake for 20-25 minutes or until golden brown.
Notes
- Use leftover rotisserie chicken for convenience.
- Customize vegetables to your preference.
- Freeze unbaked hand pies for later use.
