Description

Delicious and easy-to-make chicken pot pie hand pies, perfect for a quick meal or snack.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1/2 cup diced potatoes
  • 1/4 cup diced onions
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 package refrigerated pie crusts (or homemade)
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan, melt butter and sauté onions until soft.
  3. Add flour, stir to make a roux.
  4. Slowly add chicken broth and milk, stirring until thickened.
  5. Add chicken, vegetables, potatoes, salt, and pepper. Mix well.
  6. Roll out pie crusts and cut into circles.
  7. Spoon filling onto half of each circle, fold over, and seal edges with a fork.
  8. Brush with egg wash and cut slits on top.
  9. Bake for 20-25 minutes or until golden brown.
