A creamy and comforting soup that captures the flavors of a classic chicken pot pie.
Ingredients
- 2 tbsp butter
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1/4 cup flour
- 4 cups chicken broth
- 2 cups milk
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Sprinkle flour over vegetables and stir well.
- Slowly pour in chicken broth while stirring.
- Add milk, chicken, peas, thyme, salt, and pepper.
- Simmer for 15 minutes, stirring occasionally.
- Serve hot.
Notes
- Use rotisserie chicken for quick prep.
- Add biscuits on the side for a pot pie feel.
- Store leftovers in the fridge for up to 3 days.
