A creamy and comforting soup that combines the flavors of a classic chicken pot pie in a bowl.
Ingredients
- 2 tablespoons butter
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1/3 cup all-purpose flour
- 4 cups chicken broth
- 2 cups milk
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Sprinkle flour over the vegetables and stir well.
- Slowly pour in chicken broth and milk, stirring constantly.
- Bring to a simmer and cook for 10 minutes.
- Add chicken, peas, thyme, salt, and pepper.
- Cook for 5 more minutes until heated through.

- Use rotisserie chicken for easy prep.
- Add diced potatoes for extra heartiness.
