Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup fresh spinach
- 1 cup sliced mushrooms
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes per side.
- Place the chicken in a baking dish and top with spinach and mushrooms.
- Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Serve hot.
Notes
- You can substitute spinach with kale if preferred.
- For extra flavor, add a sprinkle of grated Parmesan cheese before baking.
