Ingredients
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup Greek yogurt
- 1/4 cup honey
- 1 egg
- 1 tsp vanilla extract
- 1 cup grated apple
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk yogurt, honey, egg, and vanilla.
- Fold dry ingredients into wet ingredients until just combined.
- Stir in grated apple.
- Spoon batter into muffin cups, filling each 3/4 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool before serving.
