A festive twist on chimichangas, combining lean beef and cheese for a healthier holiday dish.
Ingredients
- 1 lb lean ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 6 whole wheat tortillas
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sauté until soft.
- Add ground beef and cook until browned.
- Stir in garlic powder, cumin, salt, and pepper.
- Remove from heat and mix in shredded cheese.
- Place a portion of the mixture in the center of each tortilla.
- Fold the tortillas into chimichanga shapes.
- Bake at 375°F for 15 minutes or until golden brown.
Notes
- Use lean beef to reduce fat content.
- Whole wheat tortillas add fiber.
- Serve with salsa or Greek yogurt for extra flavor.
