Ingredients
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 tsp ground cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, corn, bell pepper, and red onion.
- Add avocado and cilantro, gently mixing to avoid mashing the avocado.
- In a small bowl, whisk lime juice, olive oil, cumin, salt, and pepper.
- Pour dressing over the salad and toss lightly.
- Chill for 30 minutes before serving.
