Ingredients
- 4 large eggs
- 2 tbsp Greek yogurt
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 4 large lettuce leaves (romaine or butter lettuce)
- 4 slices cooked turkey bacon, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 avocado, diced
Instructions
- Hard-boil the eggs, then peel and chop them.
- In a bowl, mix chopped eggs, Greek yogurt, Dijon mustard, salt, and pepper.
- Lay out lettuce leaves and spoon the egg salad onto each.
- Top with turkey bacon, cherry tomatoes, and avocado.
- Fold the lettuce leaves into wraps and serve.
