Description
A healthy twist on the classic Rotel Ranch Dip, perfect for Christmas gatherings. This version uses lighter ingredients without sacrificing flavor.
Ingredients
- 1 (10 oz) can diced tomatoes with green chilies (Rotel), undrained
- 1 (8 oz) package reduced-fat cream cheese, softened
- 1/2 cup plain Greek yogurt
- 1 packet (1 oz) ranch dressing mix
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- In a medium bowl, combine softened cream cheese and Greek yogurt until smooth.
- Add ranch dressing mix, garlic powder, onion powder, and black pepper. Mix well.
- Stir in the undrained diced tomatoes with green chilies.
- Fold in chopped cilantro if using.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to blend.
- Serve with vegetable sticks, whole grain crackers, or baked tortilla chips.
Notes
- For a spicier version, use hot Rotel tomatoes.
- This dip can be made up to 2 days in advance.
- If the dip is too thick, add 1-2 tablespoons of milk to reach desired consistency.
