Description
A festive and healthy frittata combining spiced Bombay potatoes with eggs, perfect for Christmas breakfast or brunch.
Ingredients
- 2 medium potatoes, diced
- 4 eggs
- 1 onion, finely chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tbsp olive oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Preheat oven to 180°C (350°F).
- Heat olive oil in an oven-safe pan. Add cumin seeds and let them sizzle.
- Add chopped onions and sauté until golden.
- Stir in diced potatoes, turmeric, garam masala, and salt. Cook until potatoes are tender.
- Beat eggs in a bowl and pour over the potato mixture.
- Cook on low heat until edges set, then transfer to oven for 10-12 minutes until fully cooked.
- Garnish with fresh coriander before serving.
Notes
- Use leftover boiled potatoes for quicker preparation.
- Add chopped bell peppers for extra crunch and flavor.
- Serve with a side of green chutney or yogurt.
