Ingredients
- 1 lb cooked brisket, shredded
- 4 corn tortillas
- 1 cup corn kernels
- 1/4 cup cotija cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tbsp lime juice
- 1/2 tsp chili powder
- 1/4 cup cilantro, chopped
- 1 avocado, sliced
- Salt and pepper to taste
Instructions
- Heat the corn kernels in a pan over medium heat for 3-4 minutes.
- Mix Greek yogurt, lime juice, chili powder, and salt to make the sauce.
- Warm the tortillas in a dry skillet for 30 seconds per side.
- Layer shredded brisket, corn, avocado, and cotija cheese on each tortilla.
- Drizzle with the yogurt sauce and garnish with cilantro.
- Serve immediately.
