A healthy and festive casserole featuring butternut squash and kale, perfect for Christmas gatherings.
Ingredients
- 1 medium butternut squash, peeled and cubed
- 2 cups kale, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup low-fat milk
- 1/2 cup grated Parmesan cheese
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
Instructions
- Preheat oven to 375°F (190°C).
- Toss butternut squash with olive oil, salt, pepper, and nutmeg. Roast for 25 minutes.
- Sauté onion and garlic until soft. Add kale and cook until wilted.
- Layer roasted squash and kale mixture in a baking dish.
- Pour milk over the layers and sprinkle with Parmesan cheese.
- Bake for 20 minutes until golden and bubbly.

- Use fresh kale for best texture.
- Substitute almond milk for a dairy-free option.
