Ingredients
- 1 large head cauliflower, chopped
- 4 cloves roasted garlic
- 1 cup sharp cheddar cheese, shredded
- 4 cups vegetable broth
- 1 cup milk (or unsweetened almond milk)
- 1 tbsp olive oil
- 1 small onion, diced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
Instructions
- Preheat oven to 400°F. Toss cauliflower with olive oil, salt, and pepper. Roast for 25 minutes.
- In a pot, sauté onion until soft. Add roasted garlic and cauliflower.
- Pour in vegetable broth and simmer for 15 minutes.
- Blend the soup until smooth using an immersion blender.
- Stir in milk and shredded cheddar until melted.
- Season with paprika and serve warm.
Notes
- Use freshly roasted garlic for best flavor.
- For extra creaminess, add a splash of heavy cream.
- Store leftovers in an airtight container for up to 3 days.
