A healthy, low-carb oven dish perfect for Christmas, featuring chicken, spinach, and mushrooms.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, thyme, salt, and pepper.
- Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes per side.
- Place the seared chicken in a baking dish.
- Add spinach and mushrooms around the chicken.
- Bake for 20-25 minutes or until the chicken is fully cooked.
- Sprinkle mozzarella cheese on top (if using) and bake for another 2-3 minutes until melted.
- Serve hot.

- Use fresh spinach for best results.
- Adjust seasoning to your taste.
- For extra flavor, add a splash of lemon juice before baking.
