Ingredients
- 8 oz whole wheat pasta
- 1 cup cottage cheese
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 cup low-fat milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg (optional)
- Fresh parsley for garnish
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a blender, combine cottage cheese, parmesan, garlic, olive oil, milk, salt, pepper, and nutmeg. Blend until smooth.
- Pour the sauce over the cooked pasta and stir to coat evenly.
- Garnish with fresh parsley and serve warm.
