Ingredients
- 2 cups cooked chicken breast, shredded
- 8 oz whole wheat pasta
- 1 cup low-fat Greek yogurt
- 1 cup low-sodium chicken broth
- 1 cup mushrooms, sliced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1/4 cup whole wheat flour
- 1/4 cup Parmesan cheese
- 1 tsp olive oil
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta according to package directions, drain.
- In a skillet, heat olive oil and sauté onions, garlic, and mushrooms.
- Whisk flour into chicken broth, then add to skillet with yogurt, thyme, salt, and pepper.
- Combine cooked pasta, chicken, and sauce in a casserole dish.
- Sprinkle with Parmesan cheese.
- Bake for 25 minutes until bubbly and golden.
