Ingredients
- 2 cups diced ham
- 4 cups diced potatoes
- 1 diced onion
- 2 minced garlic cloves
- 4 cups low-sodium chicken broth
- 1 cup milk
- 1/2 cup Greek yogurt
- 1 tsp thyme
- 1 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in ham and potatoes, cook for 3 minutes.
- Pour in chicken broth, bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in milk, Greek yogurt, thyme, and black pepper.
- Simmer for 5 more minutes.
- Serve warm.
