Ingredients
- 1 lb salmon fillet, cut into bite-sized pieces
- 1/2 cup panko breadcrumbs
- 1/4 cup cornstarch
- 1 egg, beaten
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1/4 cup Greek yogurt
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tsp lime juice
- 1 tbsp chopped green onions
Instructions
- Preheat oven to 400°F (200°C).
- Mix panko breadcrumbs, cornstarch, salt, and pepper in a bowl.
- Dip salmon pieces in beaten egg, then coat with breadcrumb mixture.
- Place salmon bites on a baking sheet lined with parchment paper.
- Drizzle with olive oil and bake for 12-15 minutes until crispy.
- Mix Greek yogurt, sweet chili sauce, sriracha, and lime juice for the bang bang sauce.
- Drizzle sauce over salmon bites and garnish with green onions.
- Serve immediately.
