Description
A hearty and healthy Christmas dinner recipe featuring pierogi, kielbasa, and vegetables cooked in a crock pot.
Ingredients
- 1 package (16 oz) frozen pierogi
- 1 pound kielbasa, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cups shredded cabbage
- 1 can (14.5 oz) diced tomatoes, undrained
- 1/2 cup low-sodium chicken broth
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Place the frozen pierogi, kielbasa, onion, bell pepper, and cabbage in the crock pot.
- Add the diced tomatoes, chicken broth, garlic powder, thyme, black pepper, and salt.
- Stir to combine all ingredients.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Serve warm.
Notes
- For a vegetarian option, omit the kielbasa and use vegetable broth.
- Leftovers can be stored in the refrigerator for up to 3 days.
