Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup low-sodium chicken broth
- 1 tbsp olive oil
Instructions
- Place chicken breasts in the crockpot.
- In a bowl, whisk together balsamic vinegar, honey, garlic, thyme, salt, and pepper.
- Pour the mixture over the chicken.
- Add chicken broth and olive oil.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Shred or slice the chicken before serving.

- For extra flavor, brown the chicken in a skillet before slow cooking.
- Serve over mashed potatoes, rice, or with roasted vegetables.
