Description

A hearty and healthy beef barley soup perfect for Christmas. Made in a crockpot for easy preparation.


Ingredients

  • 1 pound beef stew meat, cubed
  • 1 cup pearl barley
  • 4 cups beef broth
  • 2 cups water
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf


Instructions

  1. Brown the beef in a skillet over medium heat.
  2. Add the beef, barley, broth, water, onion, carrots, celery, garlic, thyme, salt, pepper, and bay leaf to the crockpot.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove the bay leaf before serving.
