Description
A hearty and healthy beef barley soup perfect for Christmas. Made in a crockpot for easy preparation.
Ingredients
- 1 pound beef stew meat, cubed
- 1 cup pearl barley
- 4 cups beef broth
- 2 cups water
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
Instructions
- Brown the beef in a skillet over medium heat.
- Add the beef, barley, broth, water, onion, carrots, celery, garlic, thyme, salt, pepper, and bay leaf to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Remove the bay leaf before serving.
Notes
- You can add other vegetables like potatoes or mushrooms.
- Store leftovers in the fridge for up to 3 days.
