Description
A healthy and hearty beef dinner cooked in a crockpot, perfect for Christmas. Includes tender beef and fresh broccoli.
Ingredients
- 2 lbs beef roast, cubed
- 4 cups broccoli florets
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a pan and brown the beef cubes.
- Transfer beef to the crockpot.
- Add onion, garlic, beef broth, salt, pepper, and thyme.
- Cook on low for 6 hours.
- Add broccoli in the last 30 minutes.
- Serve hot.

- Use fresh broccoli for best results.
- Adjust seasoning to taste.
- Serve with mashed potatoes or rice.
