Description
A flavorful and healthy Caribbean-inspired pot roast made in a crockpot, perfect for Christmas dinner. Tender beef with tropical spices, vegetables, and a hint of sweetness.
Ingredients
- 3 lbs beef chuck roast
- 2 tbsp olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup carrots, chopped
- 1 cup pineapple chunks (fresh or canned)
- 1 cup beef broth (low sodium)
- 2 tbsp tomato paste
- 1 tbsp jerk seasoning
- 1 tsp allspice
- 1 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Heat olive oil in a pan over medium-high heat. Sear the beef on all sides until browned.
- Place the seared beef in the crockpot.
- Add onions, garlic, bell peppers, carrots, and pineapple around the beef.
- In a bowl, mix beef broth, tomato paste, jerk seasoning, allspice, thyme, black pepper, and salt. Pour over the beef and vegetables.
- Cover and cook on low for 8 hours or high for 5 hours, until the beef is tender.
- Shred the beef slightly with forks before serving.
Notes
- For a spicier version, add 1 chopped Scotch bonnet pepper.
- Serve with rice, quinoa, or mashed potatoes.
- Leftovers can be stored in the fridge for up to 3 days.
