Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup brown rice
  • 2 cups low-sodium chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp olive oil


Instructions

  1. Heat olive oil in a pan over medium heat. Add chicken and sear for 2 minutes per side.
  2. Place carrots, celery, onion, and garlic in the crockpot.
  3. Add the seared chicken on top.
  4. Pour in rice and chicken broth.
  5. Sprinkle thyme, rosemary, black pepper, and salt.
  6. Cover and cook on low for 6 hours or high for 3 hours.
  7. Shred the chicken before serving.
