Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup brown rice
- 2 cups low-sodium chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat. Add chicken and sear for 2 minutes per side.
- Place carrots, celery, onion, and garlic in the crockpot.
- Add the seared chicken on top.
- Pour in rice and chicken broth.
- Sprinkle thyme, rosemary, black pepper, and salt.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken before serving.
Notes
- Use long-grain brown rice for best texture.
- For extra flavor, add a bay leaf while cooking.
- Stir halfway if cooking on high.
