Ingredients
- 2 lbs boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup skim milk
- 1 egg
Instructions
- Place chicken, broth, carrots, celery, onion, garlic, thyme, rosemary, and pepper in the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Shred chicken with two forks.
- Mix flour, baking powder, salt, milk, and egg in a bowl to make dumpling dough.
- Drop spoonfuls of dough into the crockpot.
- Cover and cook on high for 30 minutes or until dumplings are firm.
Notes
- Use fresh herbs for better flavor.
- Add more broth if you prefer a soupier dish.
- Store leftovers in the fridge for up to 3 days.
