Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup skim milk
  • 1 egg


Instructions

  1. Place chicken, broth, carrots, celery, onion, garlic, thyme, rosemary, and pepper in the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Shred chicken with two forks.
  4. Mix flour, baking powder, salt, milk, and egg in a bowl to make dumpling dough.
  5. Drop spoonfuls of dough into the crockpot.
  6. Cover and cook on high for 30 minutes or until dumplings are firm.
