A healthy and festive stuffed pepper recipe perfect for Christmas dinner, made easily in a crockpot.
Ingredients
- 4 large bell peppers (any color)
- 1 lb lean ground turkey
- 1 cup quinoa, cooked
- 1/2 cup diced tomatoes
- 1/2 cup black beans, drained and rinsed
- 1/4 cup chopped onion
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup low-sodium chicken broth
- 1/2 cup shredded low-fat cheese (optional)
Instructions
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix ground turkey, cooked quinoa, diced tomatoes, black beans, onion, garlic powder, cumin, salt, and pepper.
- Stuff each bell pepper with the mixture.
- Place the stuffed peppers in the crockpot.
- Pour chicken broth into the crockpot around the peppers.
- Cook on low for 6 hours or high for 3 hours.
- If using cheese, sprinkle on top in the last 15 minutes of cooking.
- Serve warm and enjoy.

- Use any color bell pepper for a festive look.
- Swap ground turkey for ground chicken or lean beef if preferred.
- For extra flavor, add chopped herbs like cilantro or parsley before serving.
