Ingredients

  • 1 lb lean ground turkey
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups low-sodium chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1 cup whole wheat pasta
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) white beans, drained and rinsed
  • Parmesan cheese for serving (optional)


Instructions

  1. Brown the ground turkey in a skillet over medium heat. Drain excess fat.
  2. Add the turkey, onion, carrots, celery, garlic, diced tomatoes, tomato sauce, chicken broth, oregano, basil, and black pepper to the crockpot.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Add the pasta and beans to the crockpot. Cook for an additional 30 minutes or until pasta is tender.
  5. Serve with a sprinkle of Parmesan cheese if desired.

Notes

  • For a vegetarian version, omit the turkey and use vegetable broth.
