Description

A healthy and easy crockpot recipe featuring tender pork chops and fresh vegetables, perfect for a festive Christmas meal.

Ingredients

  • 4 boneless pork chops (about 1 inch thick)
  • 2 cups baby carrots
  • 2 cups green beans, trimmed
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the pork chops for 2-3 minutes per side.
  2. Place the carrots, green beans, and onion in the crockpot.
  3. Add the browned pork chops on top of the vegetables.
  4. Sprinkle with garlic, thyme, rosemary, and black pepper.
  5. Pour the chicken broth over the ingredients.
  6. Cover and cook on low for 6 hours or high for 3-4 hours.
  7. Serve hot and enjoy.

Notes

  • You can substitute pork chops with chicken breasts for a different variation.
  • Add potatoes if you prefer a heartier meal.
  • For extra flavor, deglaze the skillet with a splash of broth and pour it into the crockpot.
