A healthy and easy crockpot recipe featuring tender pork chops and fresh vegetables, perfect for a festive Christmas meal.
Ingredients
- 4 boneless pork chops (about 1 inch thick)
- 2 cups baby carrots
- 2 cups green beans, trimmed
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Brown the pork chops for 2-3 minutes per side.
- Place the carrots, green beans, and onion in the crockpot.
- Add the browned pork chops on top of the vegetables.
- Sprinkle with garlic, thyme, rosemary, and black pepper.
- Pour the chicken broth over the ingredients.
- Cover and cook on low for 6 hours or high for 3-4 hours.
- Serve hot and enjoy.
Notes
- You can substitute pork chops with chicken breasts for a different variation.
- Add potatoes if you prefer a heartier meal.
- For extra flavor, deglaze the skillet with a splash of broth and pour it into the crockpot.
