Description

A healthy and flavorful crockpot dish perfect for Christmas dinner. Tender chicken legs smothered in a rich, savory sauce with minimal effort.


Ingredients

  • 6 chicken legs, skin-on
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 bay leaf
  • 1 tbsp cornstarch (optional, for thickening)


Instructions

  1. Heat olive oil in a skillet over medium heat. Brown chicken legs for 3 minutes per side.
  2. Transfer chicken to the crockpot.
  3. In the same skillet, sauté onion and garlic until softened, about 3 minutes.
  4. Add chicken broth, thyme, paprika, pepper, salt, and bay leaf to the skillet. Stir well.
  5. Pour mixture over chicken in the crockpot.
  6. Cover and cook on low for 6 hours or high for 3 hours.
  7. If desired, mix cornstarch with 1 tbsp water and stir into the sauce to thicken during the last 30 minutes.
