Description
A healthy and flavorful crockpot dish perfect for Christmas dinner. Tender chicken legs smothered in a rich, savory sauce with minimal effort.
Ingredients
- 6 chicken legs, skin-on
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 bay leaf
- 1 tbsp cornstarch (optional, for thickening)
Instructions
- Heat olive oil in a skillet over medium heat. Brown chicken legs for 3 minutes per side.
- Transfer chicken to the crockpot.
- In the same skillet, sauté onion and garlic until softened, about 3 minutes.
- Add chicken broth, thyme, paprika, pepper, salt, and bay leaf to the skillet. Stir well.
- Pour mixture over chicken in the crockpot.
- Cover and cook on low for 6 hours or high for 3 hours.
- If desired, mix cornstarch with 1 tbsp water and stir into the sauce to thicken during the last 30 minutes.
Notes
- For extra flavor, add mushrooms or bell peppers.
- Serve with mashed potatoes or rice.
- Store leftovers in the fridge for up to 3 days.
