Description
A hearty and healthy split pea soup made easily in your crockpot, perfect for a cozy Christmas meal.
Ingredients
- 2 cups dried green split peas, rinsed
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 bay leaf
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp salt (optional)
Instructions
- Add all ingredients to your crockpot.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the bay leaf before serving.
- Stir well and adjust seasoning if needed.
Notes
- For a thicker soup, blend half of it before serving.
- Add cooked ham or turkey for extra protein if desired.
- Store leftovers in the fridge for up to 4 days.
