Ingredients

  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken or vegetable broth
  • 1 lb boneless, skinless chicken breast or tofu, cubed
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp red curry paste
  • 1 tbsp fish sauce or soy sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced


Instructions

  1. Add coconut milk, broth, chicken or tofu, bell pepper, mushrooms, ginger, garlic, and red curry paste to the crockpot.
  2. Stir to combine, cover, and cook on low for 4-5 hours or high for 2-3 hours.
  3. Once cooked, stir in fish sauce, lime juice, and brown sugar.
  4. Garnish with cilantro and green onions before serving.
