Ingredients
- 6 large eggs
- 1/4 cup Greek yogurt
- 1 tbsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 avocado, diced
- 1/4 cup cherry tomatoes, halved
- 2 slices cooked turkey, chopped
- 1/4 cup crumbled blue cheese
- 2 tbsp chopped fresh parsley
Instructions
- Boil eggs for 10 minutes, then cool and peel.
- Chop eggs into small pieces.
- In a bowl, mix Greek yogurt, Dijon mustard, salt, and pepper.
- Add chopped eggs and stir gently.
- Fold in avocado, tomatoes, turkey, and blue cheese.
- Sprinkle with parsley before serving.
