Description
A creamy and hearty ham and potato soup perfect for a healthy Christmas dinner.
Ingredients
- 2 cups diced ham
- 4 cups peeled and diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 small onion, diced
- 4 cups low-sodium chicken broth
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in flour and cook for 1 minute.
- Slowly add chicken broth, stirring to combine.
- Add potatoes, ham, and thyme. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in milk and heat through.
- Season with salt and pepper to taste.
- Serve hot.

- Use leftover holiday ham for extra flavor.
- For a thicker soup, mash some potatoes before adding milk.
